We remembered how our forefathers made wine, naturally, in earthenware urns, a vessel that has been used since prehistory right up to the present day and we started to look for some urns that would be just right for this project. We wanted to use to make this pioneering wine: the cariñena, our local grape, and we were sure that aging this grape in earthenware urns would enhance its acidity, fruit and mineral character even more, emphasising the notes of slate and graphite, producing a unique, different and special wine, where the slow and constant oxygenation in the urns and its concentrating effect, would honour the wine as it deserved.
Vineyards
41-year-old vines of the Cariñena variety, located at an altitude of 571 meters, coordinates 41°21'46.5"N 1°11'20.1"W, on plot CA 47-16 de la Val, Cariñena, a piece of land very stony.
Elaboration
Selected plot. Manual harvest at early hours so as not to suffer from the temperature and the grapes arrive fresh at the winery. Vatted in stainless steel tanks with controlled temperature. Pre-fermentative maceration at 8ºC for 4 days. Development of highly controlled alcoholic fermentation, with occasional pump-overs and delestages. Malolactic fermentation in clay urns. Once the malolactic is finished, it is aged for 12 months in the clay urns themselves.
